About our Chef

Erin Brazley Sims and our history

The New Orleans native started cooking at a young age in her family's kitchen. She later graduated from the Culinary Institute of New Orleans and pursued a career in the Culinary Field in 2001.  Erin worked in the city's finest restaurants for over 13 years and had a 3 year stint as the Sous Chef of the prestigious Meauxbar Bistro.

Erin has over 17 years in the industry. She has a background in both restaurants and catering, as both Chef and Event Manager. She also was an event manager for one of the city's top catering companies for 4 years, ending in 2018. She has managed events from 5-5000 people. Chef Erin is currently the catering manager of the Essence Music Festival and Chef/Catering Assistant for Wrestalmaia/WWE (New Orleans) since 2015.

In 2015 Chef Erin Brazley Sims started a private chef service in her spare time, providing meals for clients for mostly holiday festivities. By early 2017 it became a full service catering company and was given the name Amaris Catering. Amaris Catering began with pop ups at local markets and quickly expanded to providing corporate lunches for business.

By August 2018, Amaris Catering secured a contract providing lunch services feeding over 200 students, faculty, and staff per day at a local private school, Stuart Hall School for Boys. Chef Erin is the Executive Chef of Stuart Hall and oversees its daily operation.  Amaris Catering services include catering and managing events of all types, intimate gatherings, backstage hospitality/production catering, private school daily lunch, corporate lunches and other catering needs. We provide staffing for both front and back of the house.

 

In November 2018 Erin Brazley and her company Amaris Catering was selected into the Jazz and Heritage Foundation's Catapult Fund Program for small, culinary based businesses. The 11 businesses selected were trained for 17 weeks of bootcamp on the in and outs of running a food business and was awarded over $50,000 in grant money. 

For 2019, Amaris Catering will continue to become a leader in the catering industry and expand our overall services to exceed beyond our clients' expectation.
