Erin Brazley Sims-Owner/Chef

The New Orleans native started cooking at a young age in her family's kitchen. She later graduated from the Culinary Institute of New Orleans and pursued a career in the Culinary Field in 2001.  Erin worked in the city's finest restaurants for over 13 years and had a spent 3 years as the Sous Chef of the prestigious Meauxbar Bistro.

Our Chef  has over 23 years in the food industry. She has a background in both restaurants and catering, as both Chef and Event Manager. As an event manager for one of the city's top catering companies for 4 years, she managed events from 5-5000 people. 

In 2016 Chef Erin started her private chef service in her spare time, providing meals for clients for mostly holiday festivities. By 2017 it developed to a full service catering company and was given the name Amaris Catering and Events. Amaris Catering began with pop ups at local markets and quickly expanded to providing corporate lunches for business.

In August 2018, Amaris Catering secured a contract providing lunch services feeding over 250 students, faculty, and staff per day at a local private school, Stuart Hall School for Boys. Chef Erin spent four years as the Executive Chef/Caterer of Stuart Hall School for boys and oversaw all its daily operation.

 

In 2019 Amaris Catering was selected as the backstage caterer of the Essence Music Festival. We went on to cater again in both 2022 & 2023 after a two year hiatus of the fest. 

 

Though we specialize in hospitality service for festivals and music events, we cater and manage events of all types including, intimate gatherings, weddings, set and film meals, corporate lunches,  and all other catering needs. 

 

We provide staffing for both front and back of the house.​ Chef Erin leads her team as they continue to strive to be leaders in the food industry and create memorable events to exceed our customers expectation.
